I've tried using beets and got a great rosy pink color, but it stank to high heaven while it was cooking. I also used the spice turmeric (straight from the McCormick's jar) and it made a great gold - a rich color that looked very eastern.
A few years ago, Martha Stewart Living did an article on using various food items to dye Easter eggs, and I got some of the ideas from there.
I think there's something about beets and vinegar... My mother used to make "Harvard beets" that have vinegar in the sauce, and I used to leave the house they stank so horribly!
the pinkish coulour from beets is usually very fugitive - though I have seen some pinkish tans from beets. The yellow from tumeric is less fast then some colours - but not bad.
