I have gotten to the part on the girlfriend shrug where I need to sew up the arms...What is the best way to handle the seams so that they hold and look nice....I can't machine stitch them but there has to be a better way...Thanks for any help.

I like using the mattress stitch for sewing up garments. Here's a great resource for finishing techniques. Seaming starts in chapter 17.

Yes, definitely mattress stitch. There's a nice tutorial on this in one of the back issues of Knitty; check the archive page, under "Techniques with Teresa".

I ussually also like the matress stitch, though Ive been known to use a crochet stitch to join seams as well.
